Why is the shrinkage so low?

Earthenware is fired to a lower temperature (Cone 04) where the clay particles don't vitrify (melt together) as much as stoneware, resulting in less densification and less shrinkage.

Is it watertight?

No, earthenware remains porous even after firing. It requires a glaze to be watertight.
